Ingredients
½ pound lean ground beef
½ pound spicy Italian sausage, casings removed
1 yellow onion, diced
3 cloves garlic, grated or minced
2 tablespoons tomato paste
3 cups store bought marinara sauce such as Rao’s
¼ teaspoon red pepper flakes, to taste
½ teaspoon dried oregano
1 teaspoon dried basil
7 cups chicken or vegetable broth
Lasagna noodles, broken into pieces
10 oz ricotta
1 cup shredded mozzarella
½ cup freshly grated parmesan
fresh basil for serving
1 tablespoon olive oil
Kosher salt & freshly cracked pepper
Directions
In a large heavy bottomed pot over medium-high heat, add ground beef and sausage and cook for about 8-10 minutes until cooked through and browned. Season with salt and pepper. Once cooked through, remove meat from pot and save for later.
In the same pot, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes, stirring occasionally. Add in garlic and cook for another minute or so.
Stir in tomato paste, marinara sauce, spices, and broth. Return meat to pot. Bring to boil then add lasagna noodles (cut into smaller pieces) to pot and reduce heat to medium-low and cook, stirring occasionally, until noodles are tender.
While the pasta is cooking, stir mozzarella, Parmesan and ricotta together in a small bowl.
Ladle the hot soup into bowls, and dollop a scoop of the cheese mixture on top. Garnish with fresh basil and enjoy!
